   No, There are no consumer ‘stand alone’ Sat Nav units that can do that.
   However, Gamin & TomTom do have commercial applications that can do what your seeking – mainly for business users only, and at a cost.

   However, if you wish to analyse the parameters that you list in your question, what you need is a seperate ‘GPS tracking unit’ and use it with tracking software on your computer, even Google earth.

   Lastly, look for a frequent ‘refresh rate’, most will only record your position every 10 mins, some 5mins, many, every 1 min. But If you can afford it, some will record your location every 10 seconds, or even 3 seconds.
   So bear that in mind.
